Air-fried Smashed Potatoes

Our red potatoes are perfect for jumping on the “smashed” vegetable trend! This is also a great recipe to for using leftover boiled potatoes. Just skip steps 1-3, and give your potatoes an extra 2-3 minutes in the air fryer.

Ingredients:

  • 1 lb small to medium Farm Pak red potatoes

  • 2 Tablespoons salted butter, melted

  • 1 Tablespoon olive oil

  • 1 large garlic clove, minced

  • 1/2 teaspoon salt

  • 1/4 freshly ground pepper

  • Parsley or chives for garnish (optional)

Instructions:

  1. Wash potatoes and place in a medium to large pot of water that covers the potatoes.

  2. Boil the potatoes for 20-30 minutes or until soft, but not falling apart.

  3. Strain potatoes from water and let the potatoes sit in the strainer for 5 minutes.

  4. Place the potatoes on a cutting board and gently smash with a potato masher or a fork. You’ll want to smash about halfway down so the potato stays mostly together. You may need to smush bits of the potato together with your finger after smashing.

  5. After smashing, sit for 5 minutes so the potatoes dry out even more before frying.

  6. Meanwhile, line your airfryer with aluminum foil. Transfer potatoes to the foil-lined airfryer with a spatula. Sprinkle minced garlic over the potatoes, followed by butter, olive oil, salt, and pepper.

  7. Air fry on 270 for 12 minutes or until the potatoes begin to brown and crisp.

  8. Top with chopped parsley or chives and serve!

*Note: Only about 9 smashed potatoes fit in my 4-liter air fryer, so after the first 9 were done, I placed them in a warming drawer while the remaining potatoes were being air-fried.
