Miso-Maple Glazed Murasaki Sweetpotatoes

Ingredients

  • 2-3 Murasaki Farm Pak sweetpotatoes, cut into wedges

  • 1–2 tbsp olive oil

  • Salt to taste

Glaze:

  • 2 tbsp white miso paste

  • 2 tbsp maple syrup

  • 1 tbsp soy sauce

  • 1 tsp rice vinegar

  • 1 tsp sesame oil

For serving:

  • Sesame seeds

  • Scallions

Directions

  1. Preheat oven to 425°F.

  2. Toss sweetpotato wedges with olive oil and salt.

  3. Roast for 30 minutes, flipping halfway, until golden and tender.

  4. While the sweetpoatoes are roasting, whisk together the glaze ingredients until smooth.

  5. Once golden, toss the sweetpotatoes in the glaze and return to oven for 5 minutes to caramelize.

  6. Garnish with sesame seeds and scallions. Serve warm.
